The mastermind of The Roman Candle's Culture of Crust has devoted himself to creating an artisanal-minded alternative to uninspired, blase commercial options torturing taste buds everywhere. Setting out to bring the charming pizza parlor back to the masses, Stouffer sustains his Roman Candle passion and purpose and wants to share it with you.
Brett Larrabee is a 30-year veteran of the franchise food business. Operated as a multi unit franchisee for a number of national brands. He has been instrumental in the operations and development of successful franchisors like Subway, Five Guys, Pancheros, Famous Dave’s , Famous Toastery, RomanCandle, Toppers Pizza and Sobelmans Pub & Grill.
Brewer Stouffer had the “F” word on his mind when he launched The Roman Candle Pizza in 2005. Actually, he had more than one.
First and foremost was fun: After traveling extensively around the US and Europe, eating pizza all over the Northern Hemisphere, Stouffer realized East Madison was missing the fun, funky sit-down pizza concept he had fallen in love with as a kid growing up outside of Austin. Doing the right thing never tasted so good.
The other "F" word was fresh. Stouffer knew he wanted to create a space where everybody could come to eat, drink and be merry –a one-of-a-kind spot that bridged the gap between the pizzeria of yesteryear and today’s foodie focus on fresh, high-quality ingredients and craft products.
We're aware that our competitors don't think twice about asking you to compromise taste and standards to save a few quick bucks. That’s simply not the Roman Candle Way. While it may have evolved into an industry buzzword, we continue to create "craft" products that we're delighted to serve our customers. We are proud of our Wisconsin Farm Fresh ﬂavors. Say the word "franchise" in Madison, Wis., and you could get yourself arrested. Well, not literally, but in this hyper-localvore market, the "F" word sticks out amidst all the farm-fresh lingo.

Our brand works great tucked in a vibrant urban neighborhood, but we have found success with 40 seats and no parking, 100 seats and plenty of parking, and at a kiosk at the local children's museum. Our concept will ﬁt in a variety of sizes, spaces, and formats. We can work in (cue video montage): downtown urban spaces, out lots of malls, strip malls, free-standing buildings, university dining halls, ofﬁce buildings, convention centers, cruise ships, submarines (we think), hospitals, UTBAPHs, bike paths and urban pedestrian malls! If there are people who want fresh, super premium pizza served quickly, we can probably make it work!

Simply put, we can create and cook as fast as or faster than just about anybody on the planet. Your customers will be amazed how quickly they can get great food.
